The Tranquerah

xxx

feeling honoured to be invited by Elaine
to Burt & Whye Leng's house for CNY
home visit, on the spot itself during the
visit to their house only i knew that dinner
was at this long-heard Nyonya Restuarant
named, THE TRANQUERAH

TRANQUERAH refers to a road in Malacca
a part of Malacca city was originated
from the Portuguese word, "palisades"
which means entrenchment or outworks
made from stakes driven into the ground
a fortress to protect the town

this restaurant named, The Tranquerah -
Malacca Nyonya Cuisine which located at
Red Carpet Avenue, Encorp Strand provides
a unique dining environment where East
meets West that serves authentic Nyonya
cuisine a heritage setting design place

meet Aunty Florence Tan which is the recipe
contributor to The Tranquerah which serves
unique and aromatic Nyonya Cuisine

anywhere that you could still find chairs
made of biscuit tins these days? This reminds
me of Old School time and also the Malacca's
era of Baba and Nyonya living lifestyle

look at the menu which was design to feel
"old school" with the yellowish-brown paper
and the cursive writings reminds me of those
time when ball pen was invented

when it comes to Nyonya cuisine sambal belacan
is never disappearing from the serve on table
it is the most unique small dish to with the
main course that will never go missing

PONG TEH - famous peranakan nyonya dish where
chicken or pork stew are cooked with fermented
soybean paste, potatoes and shiitake mushrooms
this dish is surely be found on a Nyonya meal

IKAN CINCARU SUMBAT (Stuffed Fish) - lots of
sambal been stuffed into cincaru to marinate
and provides the juiciness of the fish while
infusing flavours of sambal into the fish

CINCALUK OMELETTE - made by fermented shrimps
known as "gerago" or "geragau" caused saltiness
sauted with big onions and chilli before breaking
the eggs to give a stir by adding the cincalok
and cook it over low to medium heat in a pan
the salt is ommited as the shrimps were the ones
causing the saltiness and calamansi juice is
squeezed before serving this dish on the table

SAMBAL BENDI (Ladies Fingers) - the stickeness
of the ladies fingers lies in the sambal belacan
provides a great kick of taste of the chilli

SAGO DELIGHTS & BUBUR CHA CHA - the sago delight
is made into alike jelly form accompanied with
sweet gula malacca cream gravy while the bubur cha
cha is thick and creamy with the strong taste of
the brown sugar, which is known as "gula melaka"

i felt myself travelling back with a time machine
while entering the washroom, which is totally so
"old school" design
